Chicken Tortilla Soup

  • 1.75 lbs (28 oz) chicken thighs 
  • 5 cups chicken broth
  • 1 yellow onion
  • 1 10 oz can tomato and green chilies
  • 1 15 oz can northern beans 
  • 1 8 oz can tomato paste 
  • 1 cup shredded cheddar cheese

  • 1 tsp minced garlic
  • 2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin 
  • 1 tsp salt
  • 1 tsp pepper 

Directions

  1. In a large pot, sauté onion in olive oil for 5 minutes.
  2. Add chicken broth, tomato and green chilies with their juices, northern beans, tomato paste. Mix and let simmer for 20 minutes.
  3. In large pan, cook chicken thighs in butter (5 minutes on each side.) Add all seasonings to chicken.
  4. Add chopped chicken and shredded cheese. Let cook for another 5 minutes.
  5. Turn burner to low and allow soup to simmer for 10-20 min.
