Chicken Tortilla Soup

Included in pickup
- 1.75 lbs (28 oz) chicken thighs
- 5 cups chicken broth
- 1 yellow onion
- 1 10 oz can tomato and green chilies
- 1 15 oz can northern beans
- 1 8 oz can tomato paste
- 1 cup shredded cheddar cheese
Excluded in pickup
- 1 tsp minced garlic
- 2 tsp paprika
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
Directions
- In a large pot, sauté onion in olive oil for 5 minutes.
- Add chicken broth, tomato and green chilies with their juices, northern beans, tomato paste. Mix and let simmer for 20 minutes.
- In large pan, cook chicken thighs in butter (5 minutes on each side.) Add all seasonings to chicken.
- Add chopped chicken and shredded cheese. Let cook for another 5 minutes.
- Turn burner to low and allow soup to simmer for 10-20 min.
