Air Fried Chicken Taquitos

Included in pickup

  • 2.75 lbs (44 oz) boneless skinless chicken breasts
  • 1 taco seasoning packet 
  • 16 oz jar of salsa
  • 28 Mission Zero Carb Tomato Basil Tortillas
  • 1 cup plain Greek yogurt 
  • 1 cup shredded Colby jack cheese

Directions

  1. Place chicken breasts in the slow cooker and sprinkle evenly with taco seasoning.
  2. Pour salsa over evenly.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours.
  4. Shred chicken with 2 forks and toss in crock pot with juices.
  5. Once chicken is cooked & shredded, combine in bowl with Greek yogurt and shredded cheese.
  6. Mix until combined 
  7. Add a spoonful of shredded chicken into tortillas and roll before adding to air dryer 
  8. Spray with olive oil spray (optional). Air fry for 10 minutes at 450 degrees (or broil in the oven until crispy)
  9. Serve as 4 taquitos (1 serving)
