Chicken Veggie Soup

- 2.5 lbs (40 oz) chicken thighs
- 5 cups chicken broth
- 1 yellow onion
- 2 10 oz cans tomato and green chilies
- 1 12 oz can tomato paste
- 3 diced bell peppers
- 2 cups spinach
- 1/2 cup shredded cheddar cheese
Excluded in pickup
- 1 tsp minced garlic
- 2 tsp paprika
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp pepper
Directions
- In large pan, cook chicken thighs in butter (5 minutes on each side.)
- in a large pot, sauté onion in olive oil for 5 minutes. Add diced peppers and minced garlic and sauté until soft.
- Add chicken broth, tomato and green chilies with their juices, tomato paste, paprika, chili powder, salt pepper . Mix and let simmer for 20 minutes.
- Add chopped chicken, spinach and shredded cheese. Let cook for another 5 minutes.
