Chicken Veggie Soup

Ingredients

Included in pickup

  • 2.5 lbs (40 oz) chicken thighs 
  • 5 cups chicken broth
  • 1 yellow onion
  • 2 10 oz cans tomato and green chilies 
  • 1 12 oz can tomato paste
  • 3 diced bell peppers
  • 2 cups spinach
  • 1/2 cup shredded cheddar cheese 

Excluded in pickup

  • 1 tsp minced garlic
  • 2 tsp paprika
  • 1 tsp chili powder 
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. In large pan, cook chicken thighs in butter (5 minutes on each side.)  
  2. in a large pot, sauté onion in olive oil for 5 minutes. Add diced peppers and minced garlic and sauté until soft. 
  3.  Add chicken broth, tomato and green chilies with their juices, tomato paste, paprika, chili powder, salt pepper . Mix and let simmer for 20 minutes.
  4.  Add chopped chicken, spinach and shredded cheese. Let cook for another 5 minutes.
