- 2.75lbs (44oz) chicken breasts sliced into thin strips
- 1 yellow onion
- 1 cup of white rice (uncooked)
- 1 jar of salsa con queso
- Corn Tortillas (taco size - 30 minimum)
Excluded in pickup
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 2 cups of water
- 2 tsp olive oil
Directions
- Microwave 1 cup of rice and 2 cups of water in microwave safe bowl for 15 minutes.
- Saute onion in olive oil until softened, about 5 minutes. Set aside.
- Season chicken with salt, paprika, and garlic powder.
- Cook strips of chicken in olive oil over medium heat, 4-5 minutes or until cooked through.
- Add onion, jar of queso, and cooked rice to pan. Stir and cook for additional 5 minutes
- Serve as 3 tacos (1 serving)
