White Chicken Chili

  • 2.75 lbs (44 oz) chicken breast
  • 1 yellow onion, diced
  • 3 cups chicken broth
  • 2 15 oz cans northern beans, rinsed and drained 
  • 1 15 oz can corn 
  • 4 oz (half block) light cream cheese 
  • 1/4 cup half & half
  • 8 oz green chilies 
  • Small handful cilantro 

Excluded in pickup

  • 1 Tbsp minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper 
  • 1 tsp cumin
  • 3/4 tsp oregano 
  • 1/2 tsp chili powder 
  • 1/4 tsp cayenne pepper 

Directions

  1. Add chicken breasts to bottom of slow cooker. Top with salt, pepper, cumin, oregano, chili powder, cayenne pepper.
  2. Top with diced onion, minced garlic, drained and rinsed beans, green chilies, corn, chicken broth, cilantro. Stir.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 8 hours.
  4. Shred chicken with hand mixer or 2 forks, then return to slow cooker.
  5. Add cream cheese and half and half. Cook on HIGH for 15 more minutes.
  6. Use leftover chicken in another meal or freeze for later use
