White Chicken Chili

- 2.75 lbs (44 oz) chicken breast
- 1 yellow onion, diced
- 3 cups chicken broth
- 2 15 oz cans northern beans, rinsed and drained
- 1 15 oz can corn
- 4 oz (half block) light cream cheese
- 1/4 cup half & half
- 8 oz green chilies
- Small handful cilantro
Excluded in pickup
- 1 Tbsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
Directions
- Add chicken breasts to bottom of slow cooker. Top with salt, pepper, cumin, oregano, chili powder, cayenne pepper.
- Top with diced onion, minced garlic, drained and rinsed beans, green chilies, corn, chicken broth, cilantro. Stir.
- Cover and cook on HIGH for 3-4 hours or LOW for 8 hours.
- Shred chicken with hand mixer or 2 forks, then return to slow cooker.
- Add cream cheese and half and half. Cook on HIGH for 15 more minutes.
- Use leftover chicken in another meal or freeze for later use
