  • 2.75 lbs (44 oz) Chicken Breasts
  • 1 15 oz can Black beans
  • 1 15 oz can Corn
  • 1 10 oz can Diced tomatoes & green chilies
  • 1/2 cup Chicken broth
  • 1 Ranch seasoning packet
  • 1 8 oz block Cream cheese
  • 2 Tbsp Lime juice

  • 1 tsp onion powder
  • 1 tsp pepper

Directions

  1. Place chicken breasts in the Crock Pot. Add drained and rinsed black beans, drained corn, diced tomatoes with their juice, onion powder, ranch seasoning, and black pepper.
  2. Pour lime juice and chicken broth over the top. Add the block of cream cheese on top.
  3. Place lid on slow cooker. Cook on HIGH for 3-4 hours or on LOW for 5-6 hours. Let chicken reach 165 degrees.
  4. Remove chicken and shred with two forks. Place back in Crock Pot.
  5. Stir ingredients together until cream cheese is well mixed.
  6. Use leftover chicken for another meal or freeze for later use
  7. Serve & enjoy!

Additional notes

Serve as tacos, over rice, as burrito bowls, or as a salad!

Optional toppings: lettuce, guacamole, shredded cheese, sour cream
