  • 2.5 lbs (40 oz) boneless skinless chicken thighs, diced into cubes
  • 1/2 cup diced onion
  • 1 cup broccoli 
  • 2 cups long-grain rice uncooked
  • 3 cups chicken broth (bouillon cubes)
  • 1 10.5 oz can of cream of chicken
  • 1 cup shredded cheddar

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt & pepper as needed  

Directions

  1. Place all ingredients except cheese in slow cooker. 
  2.  Cover and cook on LOW for 3-4 hours stirring every hour.
  3.  Stir in 1 cup of cheese until creamy.

Additional notes

Save extra chicken in a freezer bag for later.
