- 2.5 lbs (40 oz) boneless skinless chicken thighs, diced into cubes
- 1/2 cup diced onion
- 1 cup broccoli
- 2 cups long-grain rice uncooked
- 3 cups chicken broth (bouillon cubes)
- 1 10.5 oz can of cream of chicken
- 1 cup shredded cheddar

Directions
- Place all ingredients except cheese in slow cooker.
- Cover and cook on LOW for 3-4 hours stirring every hour.
