  • 2.75lbs (44oz) chicken breasts sliced into thin strips
  • 1 yellow onion
  • 1 cup of white rice (uncooked)
  • 1 jar of salsa con queso
  • Corn Tortillas (taco size - 30 minimum)

These are staple ingredients you may already have in your house.
  • 1 tsp paprika
  • 1 tsp garlic powder 
  • 1 tsp salt
  • 2 cups of water
  • 2 tsp olive oil

Directions

  1. Microwave 1 cup of rice and 2 cups of water in microwave safe bowl for 15 minutes.
  2. Saute onion in olive oil until softened, about 5 minutes. Set aside.
  3. Season chicken with salt, paprika, and garlic powder. 
  4. Cook strips of chicken in olive oil over medium heat, 4-5 minutes or until cooked through. 
  5. Add onion, jar of queso, and cooked rice to pan. Stir and cook for additional 5 minutes
  6. Serve as 3 tacos (1 serving)

Additional notes

Stuff mixture into 3 pan-heated corn tortillas for tacos!
